What kind of smoker do you actually use?

Hey everyone, I just picked up my first pellet grill and honestly have no clue what I'm doing — should I commit to a dedicated smoker or is an offset still worth it for the flavor profile? Also open to suggestions on wood chips since everything tastes like burning toast so far.

I've cycled through three different smokers in five years and here is what I learned:

Weber Smokey Mountain — this was my first one, a big black barrel with two legs. Good for learning because it forces you to manage airflow yourself (two vents), but honestly it's a pain to keep steady below 250F without constant attention. Great looking on the deck though, which matters more than I planned.

Pellet smoker — jumped into a Traeger after smoking my first brisket and hating how long the cook took. The digital temp control is genuinely transformative if you aren't already good at temperature management. Downside: every time you open it to check something you lose about 10-15 minutes
