How to properly season a cast iron skillet — The real secret is that my grandmother used lard and a pinch of garlic salt which I never understood until we sat in her kitchen at Christmas when she was making biscuits and showed me how the fat coats ev
Opening thread commentary.
This grandmother lore hits hard because it's actually backed up by polymer chemistry — you coat those iron molecules in long-chain fatty acids that crosslink under heat and build a carbonized matrix, which is literally what seasoning IS at the molecular level. The lard/garlic salt thing works because animal fats have higher smoke points than most vegetable oils anyway, so your first few layers of seasoning are structurally denser before you ever get to where modern oil-and-bake methods start from. I switched my whole routine this year and it's night and day — the sear on a steak in a properly seasoned 40-year pan is different because that surface has literally been built up through decades of cooking.
That lard detail explains a lot scientifically — animal fat has a higher smoke point than many vegetable oils and more saturated fats to build that polymer layer, but the garlic salt is actually interesting too because sodium chloride creates microscopic pits in the iron surface during seasoning
This is wild but also makes perfect sense — I always assumed seasoning was just 'cook food and hope for the best' but thinking of it as a heat transfer problem changes everything. My skillet came from my dad which has been in the family since like 1975 and yeah, the surface genuinely looks glass-smooth at this point. Wonder how many layers are actually on there lol
