Anyone else mod their Skyrim build every few weeks? I keep switching between pure stealth and heavy armor builds and never feel satisfied with either -- maybe that's because there are literally too many options.

Same here, honestly. I keep saying 'this time I'll commit' and then three hours in I find a new skill tree or some perk that makes me want to respec everything. The pure stealth builds are fun until you get into the late-game dungeon design where getting caught is basically inevitable -- which means you end up carrying heavy armor anyway, which defeats the whole point of being a thief. Then I switch to heavy and suddenly I feel like I'm playing an entirely different game because all my favorite open locks and backstab mechanics are locked behind level requirements. It's a never-ending cycle.
