Unpopular opinion about coffee shops

I was thinking about how we always assume that a good cup of coffee depends on the roast or the bean variety but my uncle who runs this tiny hole-in-the-wall spot in Astoria says it's actually all about the water temperature and he's been telling me stories for years about his grandfather who used to brew coffee over open fires using whatever pot was nearby because that's how everyone did it back then and it made him realize that we've complicated something fundamentally simple with equipment and branding which is probably why I haven't been able to sleep properly since Tuesday because every time I close my eyes I can hear the sound of a percolator running in some 1950s kitchen.

The real problem with modern coffee culture is that it's commoditized to death — everything has to be artisanal and locally sourced and ethically produced and yes we love that those things matter but when every cafe in a five-block radius is serving the exact same $6 oat milk latte from the exact same roaster you lose what made cafes good in the first place which was community space where people actually sat down and talked rather than just ordering through an app to take it home, and I remember this one shop downtown that had these mismatched velvet armchairs scattered everywhere like someone's living room exploded and there was a chalkboard with local events on it not influencer recommendations. I used to go there every Tuesday for two hours straight and the barista knew my name which is wild now because half of them are just operating kiosks at this point, but I once had an argument about whether coffee was technically a fruit juice vs a bean brew in that specific cafe and we debated it until they closed the shop. Anyway the real issue isn't the quality — the beans are fine — it's the loss of placehood where you can find any "curated" experience from Tokyo to Tijuana without ever feeling like you're actually somewhere specific, which is kind of what happened to me in 2014 when I tried that extreme minimalist shop downtown and spent forty minutes waiting for a black coffee only to realize they didn't serve food or seating at all.
